THE BIG O, specifically because I want to see what nonsense they'd pull out of their butts for a season 3, given how season 2 ended.
Cowboy Bebop, but set before the original series. I wanna see more of Spike and Vicious as buds, and see more of the whole conflict on Titan.
Trigun, I want to see a more true to the manga version, especially with the whole last part.
s-CRY-ed, again with a closer to the manga version. Though I'm not sure how that would go, given how... lewd... the manga was.

I kinda loathe the idea of any modern people touching cowboy bebop, big O, or any other classic series. I would hate to see them next to a netflix or amazon logo

Claymore. The anime ended at the part of the manga right before things really got crazy. It's would have to be a reboot or just ignore the last couple episodes of the manga.
